Use up those hand-picked apples with this recipe

Have you been apple picking lately? Got a bunch of random apples sitting on your counter, waiting to be eaten? This recipe is for you. Ugly apples, slightly bitter apples, apples with one bite taken out of them can be easily disguised by baking them. Plus, baking softens the hard edge of a strong-flavored fruit. Sweet fillings are a natural for the season.

Easy Baked Apples

Ingredients:
apples, any kind
butter, ghee or dairy-free substitute
currants
pecans or walnuts
pinch of Pollen Ranch Spices “Divine Desserts”

Preheat oven to 350F.
Using a melon baller, core apple, leaving bottom intact.
Scoop a teaspoon or so of butter into the apple, a teaspoon or so of currants, 2-3 nuts or nut pieces, then a hearty pinch of Divine Desserts.

Stand the stuffed apple in a baking pan and roast until tender, about 30-45 minutes, checking apple for tenderness. Remove before the apple begins to split.

Cool for 10 minutes, serve as is or over oatmeal or as an accompaniment to roast pork.
